Although we ship to the above schedule of featured cheeses for the vast majority of the year, occasionally, we may take advantage of being able to secure a truly special, hard to find cheese on short notice and may substitute an item. Additionally, due to the perishable nature of the product and our need to secure our cheeses from abroad literally months in advance, your first shipment may be comprised of a combination of three of our favorites that we keep on hand year round including: Spanish Manchego, Antique Swiss Gruyere, Hearty English Stilton, Aged Dutch Gouda, and our favorite, Italian Parmigiano Reggiano. Rest assured, any combination of the above cheeses will make an unforgettable first impression!
